Since Windows App natively is not providing drag & drop functionality for any type of files stored in your inbox or local drive it's a bit confusing how to work with them. Let me explain one of the ways (and I believe the simplest) to do attachments.
First of all we will need to create a folder where we are going to store files we want to add to SAP. Pick a location on your local drive using File Explorer, I'd suggest to use your Documents folder, just create an Attachments inside. Remember the path as we will need to open it in SAP later. (In my case path is "C:\Users\krapinevycha\OneDrive - Production Equipment Ltd\Documents\Attachments")
Since that folder is local and you have your Outlook running you should be able to drag & drop emails straight from your inbox to that folder as well as any pdf files attached to email or from any other location on your laptop.
Here you can see email stored in the folder.
No we need to define location where we are going to store attachments on server's drive to be able to add them into SAP.
Locate File Explorer in your Windows app, it may not be added to your favourites but you can find it under Apps tab
Once opened, make an attachments folder and Pin it to Quick Access.
Now that folder should be the first one in the Home list on SAP and you will be able to attach it's content.
Basically you should copy & paste (Ctrl+C/Ctrl+V or right-click) your files from local File explorer to the one running with Windows app.

below the old way which not working for some users, therefore not recommended.
Now we can move to the SAP side running with Windows App.
In any type of document go to attachments tab and do Browse.
By default SAP opens it's attachments storage on the server full of file which may cause freezing or lag, when Open window pops up click on This PC (Home moving forward) immediately to prevent it from sticking.
Next we need to locate the Attachments folder we just have made on your laptop. Scroll down a bit until you see "C on *your laptop name*". In my case IT-AK is name of my PC and C name of the main drive. That is your local storage, open it and follow the path of your Attachments folder starting from \users\*your username*.
If all was done correctly you should see your files in it, once the first attachment done from that location it should be defaulted for the next time you do Browse
Pretty much it, now when the first attachment is done successfully that folder will be opened straight away without need to go through the file system again until your session is closed (currently session resets after 3 hours of idle). So you just need to save your files in the Attachments folder on your laptop and open them with Browse in SAP Document Attachments tab. Unfortunately, SAP will revert back to it's default location after session is closed, so next day you will have to do attachment from your location to have it defaulted again. :( let's make it a bit easier to access it.
In Open window open Home and you will see shortcuts in quick access section, first of all lets clear it from unneeded stuff like Desktop, Music, Pictures by right-clicking on their names and doing Unpin from Quick Access.
Once all removed, go to your Attachments root folder (one before) and pin it the same way by right-clicking and doing Pin to Quick access.
From now your folder is the fist one in the list so next time you can access it faster.
Know issue where system not going further when trying to access your laptop drive.
As a workaround you can do the same way from File Explorer in Windows App.
Exact same way here, locate your attachments folder on your C on *laptop name* drive and pin it to Quick Access for easy access.
That would add the folder to your Home page as a shortcut.
